Kangaroo Loin Fried Flat Bread Pizza

INGREDIENTS

For the grapes
• 1 cup seedless purple grapes
• 2 tbsp sugar
• 2 tbsp honey
• 1 tbsp unsalted butter

For the caramelized onions
• 1 lrg white cooking onion (sliced)
• 1 tsp butter

For the kangaroo
• 1 oz unsalted butter
• 1 tbsp vegetable oil
• 1 3 oz Kangaroo loin
• 1 sprig of thyme
• 2 tbsp Cracked black peppercorns
• Salt taste

For the pizza
• 70 gr home made or purchased pizza dough
• 300 ml vegetable oil
• 10 ml extra virgin olive oil
• 100 gr Brie cheese
• tt maldon salt

Method

1. butter a ovenproof skillet with butter. Add the seedless grapes sprinkle with the 2 tablespoons sugar. Roastabout 25 minutes in a 500 degree F oven. Transfer to a bowl using a slotted spoon. Simmer the juices withhoney on the stove until syrupy, 6 to 7 minutes. Pour the syrup over the grapes.

2. Using a wide, thick-bottomed sauté pan Coat the bottom of the pan with butter. Heat the pan on medium highheat until the butter is melted. Add the sliced onion and stir to coat the onions with the butter. Spread the onionsout evenly over the pan and let cook, stirring occasionally. Reduce the heat to medium or medium low to prevent the onions from burning. Cook onions until they are rich in aroma, golden brown and caramelized (approx. 20 min). Then season with salt and pepper to taste.
3. place a cast iron skillet on medium high heat or until pan is just beginning to smoke. Season the Kangaroo loinwith salt and with cracked black peppercorns. Place the loin into the pan, sear the steak until you have a greataroma and caramelization then flip.

4. Once your kangaroo has been flipped reduce to medium heat, add a large dollop of butter and the sprig of thyme and begin to baste the steak until the temperature reads 125 degrees with an instant read thermometer.Remove the loin from the pan and rest for 4 min.
5. Preheat oil to 365 degrees F. A deep-fryer is best, but if using a stove top method, fill a cast iron Dutch oven or heavy chicken fryer with oil about 3 inches deep. Roll dough out check the oil temperature and carefully add the pizza crust to the oil. Cook for 2 minutes, turn over and cook for 1 minute more. Remove to a paper towel lined plate. Transfer the crust to a oven proof tray and garnish with Caramelized onion and brie cheese. Then place the pizza under the broiler to melt slightly.

6. Once your Cheese has melted slightly, place your pizza on a plate, slice up your now medium rare, and rested kangaroo loin and arrange on top of your pizza. garnish with your beautiful sticky grapes, malden salt a few thyme petals and some olive oil and enjoy.
