– 2 large bison rib racks

– 3 pints wheat beer or individual preference

– 2 large onions, medium dice

– 500 ml of your favourite BBQ sauce to taste salt and pepper

  • 1lb ground Wild Boar
  • 1lb ground Elk
  • 1 bunch Greens Onions (minced/finely chopped)
  • 1 bunch fresh Sage Leaves (finely chopped)
  • 1tbsp Kosher salt
  • 2tbsp cracked black pepper
  • 2tbsp Olive Oil
  • 2 cups dried cranberries (finely chopped)
  • 25g soft Goat Cheese (room temperature)
  • 2 dozen “mini” burger buns or small dinner rolls
  • 1lb Parsnips

5. The BLACK ANGUS BIG GAME Chili The BLACK ANGUS BIG GAME Chilli The Best thing about making chili is that it’s done hours before you Guest’s even come to your house.TIP: Put a side of grated cheese beside the chili so your guest’s can add some cheese to their dish


‐ 1 lb ground bison

‐ 1lb elk stew

‐ 1 lb wild boar sausage

‐ We like the sausage for the chunkiness of the meat.

‐ 28 oz can whole tomato’s

‐ 28 oz can red kidney beans

‐ 2×10 oz cans whole mushrooms

‐ 2 stalks celery

‐ 2 onions

‐ 1 red ‐1 white

‐ 1 green pepper   

‐ 1 red pepper

‐ 1 teaspoon pepper

‐ 1 teaspoon crushed chilli’s

‐ 1 teaspoon sea salt

‐ chilli powder to colour

‐ Red hot sauce of your choice.

‐ 2 beers of your choice

4. Wild Boar Pulled Sus Scrofa

It wont be a Super Bowl Party without pulled Pork. But this time we are switching it up to Sus Scrofa. Put all the ingredients in a slow-cooker and let it cook overnight.


– 2 lbs.   Wild Boar, cut into large chunks  Wild Boar shoulder works well for this as it is cost effective and you get all the benefits from the long cook time

– 2 cups   Onion, chopped

– 2‐3 red   Peppers, chopped

–  6oz can   Tomato paste

– 1/2 cup   Brown sugar

– 1/4 cup White vinegar

– 1/4 cup Chili powder

– 2 tsp Dry mustard

– 2 tsp   Worcestershire sauce

2 cups of shredded cheese (you might not need it all)

1 tsp garlic powder

¼ tsp chili powder

2 tablespoons chopped fresh cilantro

1 bag of your favorite tortilla chips ½ cup salsa
